My husband enjoys Greek food but me, well I have never really thought I liked it. Mostly, the feta cheese just kind of turned me off. I guess because I’m a little picky about cheese and Feta just didn’t look right to me. However, I decided I would give this Greek chicken a try just to be nice to my husband. After all, he works hard and deserves something he likes every once in a while, right? And this low carb Greek chicken works out great for meal prep and that’s what’s most important to me. I like to prep all my meals ahead of time so I can focus on other things during the day.
What I really like about this recipe is how easy it is. I literally chopped the veggies and chicken and had it all in the oven ready to go in about 15 minutes. Then I went about prepping my next meal, low carb spaghetti squash and meatballs. You need to go check that one out to and don’t forget to pin this amazing recipe for future reference. This recipe is full of vegetables and the splash of lemon juice really makes the veggies pop. I double the batch for my family and there was nothing left when supper was over. Also, the Feta cheese, let me tell ya! I have avoided feta for along time but I am so glad I took the plunge and put it on this amazing dish. It really pulled it all together and now I am a feta cheese lover! I really think this dish would not be at all as good with out the feta. So don’t skip it! Even if you’re pretty sure you don’t like it. The black olives are probably my favourite part and this may seem odd but my husband has requested we try adding pickles and pineapple next time. I think that for us it would work well in this low carb Greek chicken because we like that flavour combination.

Low Carb Greek Chicken
- 6 Chicken Breast Diced
- 2 Red Peppers Diced
- 2 Yellow Peppers Diced
- 2 Zucchini Thick sliced
- 1 Red Onion Thick sliced
- 4 Tbs Olive Oil
- 4 Tbs Lemon Juice
- 2 Tbs Oregano
- 1 Cup Feta Cheese Crumbled
- 1 Cup Black Olives Sliced
- Preheat even to 400°F
- Place all ingredients, except feta cheese, to a big bowl and toss to mix.
- Divide ingredients between 2 baking sheets.
- Cook for 25-30 minutes until chicken is fully cooked.
- Remove from oven and serve topped with crumbled feta cheese
