One of the best parts of winter is the wonderful comfort food. Don’t get me wrong, I love summer and BBQs and roasting foods over and open fire. But winter just seems like a great time for rich, filling comfort foods and what better way to get those amazing meals then in the slow cooker. Toss everything in the crockpot in the morning and by supper you have a mouthwatering meal. I am a bit of a Pinterest junkie so that is where you will often find me looking for new yummy, low carb meals so when I came across this tasty pork chop recipe I knew I had to modify it to my family’s liking and of course low carb it. This is where my ultimate low carb slow cooker ribs came to life.
My daughter and I love sweet potatoes, prior to switching to a low carb diet, we ate sweet potatoes full of brown sugar and sometimes topped with marshmallows. Now that I try to avoid refined sugar as much as possible we had to adjust how we like our sweet potatoes. I have found roasting them with a little balsamic vinegar and a sprinkle of cinnamon makes them absolutely delicious. So I incorporate this in to my low carb slow cooker ribs to make a delicious meal all in one pot. Add a nice salad and you have an amazing low carb, family friendly meal.
So here it is in all its amazing glory! The ultimate low carb slow cooker ribs. I promise once you try these ribs you will never want them any other way! Keep in mind when you are checking out this recipe that I follow a low carb diet not keto. I allow myself 100-150 grams of carbs per day. I find this along with taking Emulin helps me meet and maintain my weight loss goals. This also means that small amounts of apples and sweet potatoes are ok. On average, in this recipe, the apples and sweet potatoes are approximately 20 grams of carbs per serving. If you are strictly keto this may not be the recipe for you.
Ultimate Low Carb Slow Cooker Ribs
- 4 Lbs Pork Ribs
- 2 Cups Sliced Apples
- 2 Cups Cubed Sweet Potatoes
- 6 Tbsp Balsamic Vinegar
- 1/2 Tsp Pepper
- 1 Tsp Salt
- 1/4 Cup Splenda Brown Sugar blend
- Place ribs in slow cooker. I cut the ribs in to 4 to 6 chunks to fit them in to the slow cooker. Sprinkle with half of the balsamic vinegar and half of the Splenda Brown Sugar.
- Add sliced apples and cubed sweet potatoes. Add salt, pepper and the remaining balsamic vinegar and Splenda Brown Sugar Blend.
- Cook on low for 8 hours
