With holidays behind us and the longest month of the year finally coming to an end, I find myself craving some soul warming comfort foods. I grew up in a home where my mom was home with us and we were raised on home grown, home cooked food. Although I try to be that same mom for my kids my thumb is far from green and I don’t always have time for home cooked. However, this time of year things seem to slow down and feel less hectic and I find myself looking for all those good things my mom used to cook. I thought you all might be looking for the same comfort foods so I created a list with some of my favorite low carb comfort foods.
Number one on my list is Beef Stew and Dumplings. My mom made stew often, it was thick and rich and oh so very filling. I love that you can pack Beef Stew full of low carb veggies and big chunks of stew meat and everyone is happy. But creating low carb dumplings proved to be a bit of a challenge. But after a few attempts I found the dumpling recipe from this amazing recipe worked well and it just made the stew!
Pot Roast is another food I enjoy. I can almost smell moms pot roast right now. Cold days in the house working away on puzzles together while a roast simmered away in the slow cooker. These are my favorite childhood memories. Roast is an easy low carb comfort food and I avoid the potatoes by roasting big pieces of cauliflower along side the roast. Add this amazing low carb gravy and you have a comfort meal your family will love.
Swiss steak was something my mom made often in the winter. My dad is an avid hunter so we were raised eating wild meat and Swiss steak was one of my favorite dishes. The tangy tomatoes and the meaty mushrooms were amazing. And the steak would be so tender and moist. I happened to come across this great recipe while cruising around Pinterest one afternoon. It has become a go to cold day, low carb comfort food in our home. Give it a try! You won’t be disappointed!
One last comfort food is a truly Canadian experience that my son requests every time I ask him what he would like for supper, or lunch and I’m sure he would even eat it for breakfast if we offered. Poutine is a must have meal around here and although it is not your average comfort food it is warm and gooey and necessary. I found this great substitute that I can enjoy when the kids request poutine. It is every bit as yummy and cheesy with less carbs, which makes me happy.
Choosing to eat low carb and reduce refined sugars doesn’t have to mean you give up all the good stuff.
