I remember a time when McDonald’s was not readily available in our home town. I also clearly remember the first McDonald’s opened here. My family, including myself, was so excited! Finally, we could treat the kids to McDonald’s even when we were not headed to the city. McDonald’s was a wonderful treat that I remember from my own childhood. Travelling to a center big enough to have McDonald’s drive thru was always fun and that awesome little toy just made long trips so much better. Who remembers the Muppets McDonald’s toys? That was a big part of my childhood and I couldn’t wait to share those same memories with my kids.
As the kids grew and life changed we began to realize Big Macs were not exactly the healthiest thing and maybe we were eating then far too often. But who wants to quit Big Mac flavor, not me or my family. So when we decided to quit the carbs I had to come up with something to replace the fast food cravings with. Enter Emulin and the Low Carb Big Mac in a bowl, which I’m sure I’m not the first person to create this lovely recipe but this is the one my family enjoys.

Big Mac in a Bowl
- 4 Lbs Hamburger
- 3 tsp Garlic Powder
- 6 tbsp Dried Onions
- 4 tsp Onion Powder
- 4 tbsp Parsley
- 6 Eggs
- 3 tbsp Chicken bouillon
- 1.5 Cups Dill Pickles (chopped)
- 1.5 Cups Low Carb Thousand Island
- 3 Cups Cheddar Cheese
- 3/4 Cups Sour Cream
- Preheat oven to 375*F
- Brown hamburger and season with chicken bouillon, dried onion, garlic powder, onion powder and parsley.
- Mix thousand island, cheddar cheese, eggs, sour cream and chopped pickles in large bowl. Add hamburger and mix thoroughly.
- Pour mixture in to 9″ by 12″ pan and bake for 30 minutes.
- Fill bowl with lettuce and scoop hamburger over lettuce and serve
