Valentine’s Day is right around the corner! I know for most this is a day of romantic meals and time spent with your significant other enjoying the love you share. Once you are parents finding those moments to be alone become increasingly more important. However, I like to make Valentine’s Day special for my entire family so I created a special low carb Valentine’s Day menu plan. Now we can celebrate as a family and stick to our diet plans. And hubby and I can sneak away once kids are settled in for the night for an evening of romance. Or we can climb in to bed and sleep because raising kids is tiring.
It just so happens that my children love spaghetti and meatballs so one of my favourite meals to serve on Valentine’s Day is spaghetti with meatballs. We are usually a very busy family so I often find that I just don’t have the time, or maybe the energy, to create meatballs. By time our work days are over and we are ready to eat if I haven’t pre made meatballs they are likely not happening. Also I’m sure you are thinking, “Spaghetti?? How can spaghetti possibly be low carb??” Well, I’m sure this is no surprise but spaghetti is not low carb so, we use spaghetti squash. It is super filling, kids love it and it is high fiber and low carb. So spaghetti squash and meatballs definitely make the main course for our low carb Valentine’s Day menu plan. This is one of my go to spaghetti sqaush and meatballs recipes.
Another favourite for my family is Caesar salad. Lots of romaine lettuce, bacon pieces, Parmesan cheese and of course the creamy ceasar dressing! I can already taste it! It’s just not spaghetti supper without ceasar salad. But again, ceasar dressing can be a little high carb and that just won’t work with our family’s low carb diet plan. So, I create my own creamy low carb dressing to pair nicely with our spaghetti squash and meatballs! I top my ceasar salad with plenty of parmesan cheese and crumbled bacon and voila, amazing low carb ceasar salad that everyone enjoys! The dressing keeps well in the refrigerator and ceasar salad is a great addition to any meal so don’t hesitate to make some extra for another night.
Ok, you just can’t have spaghetti and meatballs without cheesy garlic bread. I have really never been a huge fan of bread, even before I started my low carb journey, but it is an absolute must have with spaghetti, am I right? This one has taken a few tries to find just the right recipe my family will enjoy. I love low carb and I avoid refined sugar like the plague but I’m also not really into having a cupboard full of fancy ingredients. So I went searching for a low carb, no fancy ingredients cheesy bread and I think I found it!! Besides this is the recipe my kids actually ate right up and hubby thought it was pretty great to! So, of course, this garlic cheesy bread had to make its way to our low carb Valentine’s Day menu plan!
Now, it wouldn’t be Valentine’s Day without the decadent, chocolate dessert, right? And it can get super tricky to make a family friendly dessert, especially when kids are so accustom to the sugar filled, super sweet Valentine’s Day treats. But I have found this amazing low carb mousse that I just love. It is quick and easy to prepare, takes minimal ingredients and my whole family loves it! To make it a little more fancy for Valentine’s Day I use this recipe using sugar free chocolate pudding. I make some extra pudding and create layers. One layer of thick, creamy mousse a small dollop of just pudding and then another layer of mousse. This way when we cut in to the mouse with our spoons it is like a little lava spilling out of the centre. The kids love it!
